A Breakfast Idea

Breakfast Idea

An egg cooked over medium inside a ring of red bell pepper... with a side of black beans and Morningstar Farms vegetarian sausage. (Forgot to take the pic before I started eating, oops). This was delicious! Saw the idea on Pinterest and we made it yesterday... it was so good and for me eliminates some carbs since when I cook an egg this style, I like it on toast. I didn't think I would like this, but I did a LOT! I couldn't finish all my beans but ate the rest.

And YES!!! I KNOWWWWW I owe you all my one year update. We haven't had a chance to take the official photos and measurements yet, but are planning to do so tomorrow morning, so will hopefully get those soon!!!

One Year Post Op

Today is my one year surgaversary!!

I will have official progress photos and weigh in next week... I DID see 199.8 this past week, but then it got into that magical time of the month and now I'm 203, argh! So annoying. Hubby and I are going away for a long weekend (since our two year wedding anniversary is on Monday!) and when we return I'll take the official pics and *hopefully* have a good official weigh in lol.

SO CLOSE!


Wow! Lost 2.6 lbs in the past week and I am SO CLOSE to "Onederland"!! It's been a while since I lost that much in one week. Interestingly enough, I worked out quite a bit less this past week also. I must be doing pretty well with my food choices!

Pizza Burgers

I wanted to share this recipe - it's delicious and it works well for post-ops but would please most non-ops and kids too! It comes from the Biggest Loser Family Cookbook.

Not too many ingredients are needed. I added a couple of my own as well.


Making Pizza Burgers

Ingredients:

1 lb 93/7 lean ground beef
1 tsp dried oregano
1/2 tsp garlic powder
1/4 tsp salt
1/2 tsp crushed red pepper flakes (I omitted this because I don't like spicy)
1/2 tsp minced garlic (my addition, instead of red pepper)
1/2 cup marinara sauce (I used Classico Tomato & Basil)
4 thin slices mozzarella or provolone cheese
4 Whole Grain Hamburger Buns (we ommitted buns)

My other additions:

1 mozzarella string cheese, quartered, then chopped and 1/4 is added into each patty
1/4 tsp Mrs Dash Onion and Herb Seasoning

This was how I added the cheese into the patties - 1/4 for each one, added them in, then folded them to the inside and re-formed the patty.

So here are the full directions...

Preheat grill to high heat.

In large bowl, mix beef, oragano, garlic powder, minced garlic or red pepper flakes, salt and mrs dash seasoning until well combines.

Divide mixture into four equal portions and form into patties.

At this point add the mozzarella cheese bits if desired.

Grill burgers for about 3 minutes per side or until desired doneness (do not smash burgers with spatula). About 1 minute before they are done, add the cheese slices to burgers aand let them melt.

Meanwhile, spoon sauce into microwave safe bowl and heat until hot, 30-60 seconds. Spoon onto burger before serving.

Obviously if you'd like to use buns, put the burgers on the buns lol.

Makes 4 Servings.

A Healthier Sweet Treat

I've been trying to cut back on sweets the last few weeks. One thing I loooove is ice cream. Even though I have no trouble eating it post op, it definitely does feel a little heavier in my stomach. I stick to small amounts.

A while back we came across a cool frozen yogurt place. It's sort of the concept of a Cold Stone or Marble Slab - all kinds of things you can mix into your frozen yogurt - except at this place, you make it yourself.\

I went for some vanilla and chocolate frozen yogurts, steered clear of all the candy options and just chose to top mine with some fresh strawberries.

It was delicious and actually really refreshing. I especially liked how it didn't give me the heavy feeling in my stomach that ice cream does. I think this is a perfect treat for me now.

He had apple pie flavor frozen yogurt and strawberry banana, topped with stawberries and kiwis.

I found out later the difference between this frozen yogurt and regular ice cream is pretty drastic. It varies wildly by flavor but we're talking 80-160 cals and 0-3 grams of fat for like 1/2 cup... so definitely better than ice cream. And oh so yummy! If you have one of these around I definitely recommend it.

Last Week's Activity and Weigh In!

 So this week I feel like I rocked it! I'm feeling really good about my activity level right now. My back has been kinda sore, but I'm making it through. I didn't give ANY massages last week though, I hope that changes soon.

*(just a designation for me to remember something personal) :)

I also lost 0.8lb this week. I think I am also building some muscle which is great! I do want to do more yoga this coming week.

Girls Gone Snowshoeing... Again!

FINALLY got back into snowshoeing after a couple of months off. Last weekend just Amber and I went and we had a great time!! We went to a new area, a trail near Bear Lake in Rocky Mountain National Park. If you know the area, it is a trail that heads up toward Nymph Lake and Dream Lake. It was much steeper than what we've done previously so it was a little tougher, but I absolutely loved it!

The snow was, well, a BIT deep....!

All the signs were covered in snow. Someone dug this one out, but most we never even saw. Probably walked right over them.

Altogether we snowshoed a little over 2 hours and 2.5 miles. Pretty good for how steep it was! Afterward we went to our favorite spot up there, Peak to Peak American Grille and I tried a pesto shrimp flatbread pizza. I ate about a slice and a half of this personal size pizza.
